Amazingly Easy Chocolate and Caramel Fudge

If you need a chocolate caramel fudge recipe then this is for you.
Its simple, minimal cooking required and it looks and tastes like it takes much more effort than it does
This gives a very silky smooth fudge and I have to say that I am not a fudge person and I love this stuff

Its a great and easy recipe which requires two ingredients and is definitely a 'cheat' recipe for chocolate caramel fudge
Got to say, cheat or not its bloomin tasty and if its tasty then I don't care how simple it seems

The peanut butter cookie

So! today my self said 'self, its peanut butter cookie time'
Cant really argue with that!
I have used the same peanut butter cookie recipe for years and considered fine tuning it but after making it again today i dont think theres any reason to as it has everything i would want in a cookie

It has a great subtle flavour, a lovely texture and its very melt in your mouth so obviously you need more than one...well the first one melted in your mouth so obviously you need another one

Easy Peasy Chocolate Ganache Truffles

Want a recipe for the perfect truffle? Well i think this is it
They are choc full of chocolate, easy to make, quick to eat and overall just the best truffle I've ever tried

I actually got this one from my husband-really rocks having a husband that's a chef

Your ingredients list couldn't be easier

300ml double cream
300g milk or dark chocolate
Cocoa powder to roll them in
If you want squares you will also need a small tray-i cover mine in cocoa but you can also use greaseproof paper

Simple!

The trick with this recipe is to have the same amount of chocolate to double cream.
However, there's always a freakin catch! I find that when using milk chocolate I need another 20g of choc but with dark choc the same ratio works perfectly.

And here's the how to!

The home made sugar mouse

The Sugar Mouse

Read on if you want a nice easy and quick recipe for sugar mice

I actually learned how to make this when at the last minute I decided I wanted an old fashioned candy buffet at my wedding and thought-wouldn't it be super fun to make it from scratch.....kind of

I stood in my mums sadly black and white decorated kitchen-which I am sure she decorated like this to know when I had been baking-and made these for hours on end due to only having one silicon mouse mould.....I can laugh now but at the time I wanted to repeatedly punch myself in the face/buy another one

So super easy to make, good fun and super tasty

What you need

A block of fondant icing
Different food colouring choices
A pan
A palette knife
A mouse mould-minus the mice

The Chocolate Brownie Recipe

A chocolate brownie recipe thats easy, quick and full of chocolate! What more could you want

Never really been a brownie lover...until now
If you want a super squishy in the middle brownie that is 99% chocolate then here ya go

Ive made this 3 times in the past week and actually starting to believe I have a problem...but its so freakin good

Super easy, doesn't take long and minimal dishes so if you haven't already started getting the ingredients out the cupboard then we just cant be friends anymore

290g caster sugar
90g cocoa powder-I use bournville
2 eggs-whisked and ready to go
150g butter at room temp and cubed
pinch of salt
125g plain flour
150ml pre made thick hot choc-just full fat milk and a few tablespoons of cocoa
80g chop chips for the mix
80g choc chips to sprinkle on the top

Peppermint creams

The Amazingly Easy and Fantastically Tasty Peppermint Cream

I like them as a nibble but will also do a post on making them into Christmas baking or gifts

There are two ways to make these, one that involves egg white and one that doesn't so I will cover them both

What you need to be a peppermint cream expert

Peppermint essence.....no freakin way huh

500g Icing sugar

Water as needed

Green food colouring-traditionally either green or left white

Egg white-beaten-for the egg white version

Honeycomb part 2

So!

You followed my last post and have made an awesome slab of honeycomb and obviously you want to eat it!
Here are a few ideas on what you can do with it to make it that bit more fun and that but more calorie ridden

Dip half of it in melted chocolate-nothing like a giant malteser

Crumble and crush a big handful, grab some vanilla ice cream and mix it through. Pop the ice cream back in the freezer until its ready to be devoured

Hot Choc
Make your usual hot choc, cover in whipped cream, sprinkle with marshamallows, a puff of cocoa and....................some crumbly honeycomb on top
Nothing like an epic hot choc for a nearly cold winters night.......its nearly December, getting closer by the day so you may as well start early!

My personal favourite is Honeycomb Coffee
Crush up about 2 tablespoons worth until its like fine power, pop it in your mug and add coffee.
Gives it a nice light honeycomb flavour and make sure you have some larges shards on the side, got to have something to nibble after all
Also, it kind of reminds me of the gingerbread lattes Nescafe make, nothing like Christmas flavour all year round!

Just see below for an easy recipe on how to make honeycomb

Honeycomb

Who knew it was this easy!

200g caster sugar
6 dessert spoons of golden syrup
3 level teaspoons of bicarbonate of soda
A lovely wooden spoon
And a preferably tall sided tray with greaseproof paper as this stuff just keeps on going

So! I figured why not give it a go! Sadly attempt one was terrifying and i ended up with a blackened and blobby monster that just kept on growing, he had a short life and now lives in the bin.
This is where having a husband thats a chef definitely helps!
Turns out i burnt the sugar.....note to self to not do that again

So here it goes!

Home made recipe cards

I love! love! love! recipe cards!!!

Not into notebooks or books with space for you to fill in
I spent a lot of time looking for recipe cards so I could have a mix and match of styles I liked but the issue is they are quite expensive to buy.

So!I decided to design and make my own!

Using Microsoft publisher you can get them the right size you need for you box/tin/holder and can make them any colour, design and layout you want
Here are some examples of how easy it is to do.
I used publisher but something similar would work-usually you get a software package on your device. Make sure you have medium thickness card, some coloured ink and of courses a pair of scissors.
Give it a try and see what you come up with-mess about with font and size, background pictures or patterns and wording and I bet you come up with something that's perfect

Let's Get Baking

I love the baking items on sale just now at Asda, they are quirky, fun and as I have said before 'if its not fun then I don't want it'.
You can imagine what my kitchen looks like.....it looks pretty freakin cool according to me
When it comes to baking I like to get started so sitting converting measurements is not something I class as fun baking time. In fact seeing '1 cup of flour' makes me sad.

What cup is that person using?

I have 6 different cup sizes, which one is right?

So! Huge thanks to Asda for making my day when I saw these

At £6.00 they are my best purchase of the week and considering its Monday I think I have got some time to find more due to the range of co-ordinating items they have
Well I am going to be poorer by the end of the day...totally worth it
