Honeycomb

Who knew it was this easy!

200g caster sugar
6 dessert spoons of golden syrup
3 level teaspoons of bicarbonate of soda
A lovely wooden spoon
And a preferably tall sided tray with greaseproof paper as this stuff just keeps on going

So! I figured why not give it a go! Sadly attempt one was terrifying and i ended up with a blackened and blobby monster that just kept on growing, he had a short life and now lives in the bin.
This is where having a husband thats a chef definitely helps!
Turns out i burnt the sugar.....note to self to not do that again

So here it goes!



Pop the golden syrup and the sugar in a TALL SIDED PAN, dont think 'its kinda tall, that will do' as when you add the bicarb it just keeps on growing!If you dont have a tall pan just half the mix as this way you still get honeycomb and dont have to go spend your baking dosh on a pan.

Heat on medium and stir continuously to get make sure the sugar melts into the syrupnand they combine fast.
Once combined bring to the boil then simmer for 5-7 mins
Watch for it changing colour and dont worry about it darkening as the bicarb turns it that lovely honey colour.

Once its ready make sure you have your greasproofed tray at your side, take the pan off the heat and throw in the bicarb while you stir that mix like a crazy person
It grows very fast so really you have about ten secs to mix and then pour on your tray
It will grow a bit while its cooling, totally fine and it evens itself out over time.
Let it cool, smash to pieces and stuff your face! 
Once in a tin or tub-it, it will keep for around 2-3 weeks, after that its still edible but a bit chewy.....as in go see the dentist chewy
