Perfect scone recipe

Everyone wants the perfect scone recipe.
Something easy, tasty, quick and of course a recipe that gives you a big fluffy scone!

Well boys and girls i think this is it!
Tried and tested, tried and tested then tried and tested just a little bit more!

There are three versions- fruit scones, cheese scones and of course the plain scone so read on for all three and have yourself a scone filled day!


Plain Scone

350g self raising flour
85g cubed butter
2 heaped dessert spoons of caster sugar
1 rounded tsp baking powder
Pinch of salt
170 ml milk- ive used skimmed, semi and full fat and they all work so pick your favourite as i prefer skimmed
Beaten egg to glaze before baking if wanted

Preheat the oven to gas mark 7-yip, gas mark 7 sounds insane but trust me on this one


In your big baking bowl put the flour, baking powder and salt then add the cubed butter and rub through the dry ingredients until it resembles fine breadcrumbs.

Add your two heaped dessert spoons of sugar and give a good stir through

Get your milk and add to the dry mix and using a metal spoon mix through quite quickly
You will have a nice sticky dough-because its mixed quickly you might have cracks but dont worry about that

Flour a surface and get the dough in your floured hands. Quickly pat it between your hands and put it on the floured surface where you will pat it until its about 3/4cm high
Using your trusty scone cutter cut out as many as you can and put them on a greaseproofed tray
Take the excess dough and do the same again until you have 6/7 scones on your tray

Glaze with egg if wanted and pop in the oven for 12 mins-check at twelve mins and if they are a good golden brown on the top they are good to come out but if they need more time check every 2 mins until you have the golden brown tops

Put them on a cooling rack until ready.........only more patient people than me manage that step as im more of a burn your fingers and possibly your mouth scone eater.

Obviously slather with butter, jam and cream

The Fruit Version
When your dry ingredients resemble fine breadcrubs also add 80g raisins/sultanas and follow the rest of the steps in the same way.
80g gives you a good lot of raisins in each scone so adapt as you see fit

The Cheese Version
When your ingredients resemble fine breadcrumbs add 60g of grated cheese to the mix and use 1 dessert spoon of sugar instead of two.
Follow the rest of the recipe as its written.
